Require deposit to accept quote

As the title says it.. it would be great if you can set an amount either fixed or percentage

If option is checked then the customer would have to pay deposit to accept the quote and start the job

Maybe the button at the bottom of the quote would say 'Pay & Accept' ?

Not a bad idea, but we'd need an invoice to apply any payment against. Currently the invoice isn't created until the tech goes into the accepted quote and makes it an invoice.
